Rice Soy Dish

Ingredients

- 1 teaspoon salt
- 3 1/4-3 1/2 cups boiling water
- 1 cup uncooked extra long grain rice
- 1 lb 95% lean ground beef
- 2 cups chopped celery
- 1 (4 ounce) can mushrooms (drained net weight)
- 3 medium onions, chopped (i used 1 very large vidalia onion)
- 3 tablespoons soy sauce
Recipe
- 1 add salt to water and bring to a rolling boil.
- 2 add rice, then turn off heat and let stand while preparing the rest of ingredients.
- 3 cook ground beef with celery and onions in a large skillet. when beef is almost fully cooked, add mushrooms. drain fat.
- 4 in a 2 quart casserole dish, combine hamburger mixture, rice with water and soy sauce and bake in 325 degree oven covered for 1 hour.
- 5 uncover and bake an additional 1/2 hour or until fully cooked.
