Microwave Mexican Manicotti

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/4 lb lean ground beef
  • 2 cups refried beans
  • 6 manicotti, uncooked
  • 6 ounces taco sauce
  • 1 cup water
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 combine (uncooked) ground beef with refried beans.
  • 2 stuff manicotti shells with ground beef/bean mixture and place in a medium casserole dish.
  • 3 combine taco sauce and water.
  • 4 pour over filled shells.
  • 5 cover with plastic wrap.
  • 6 cook on high for 10 minutes.
  • 7 turn shells over.
  • 8 cook 17 minutes at 70% power with wrap vented.
  • 9 remove wrap; sprinkle with cheese.
  • 10 heat until cheese is melted.
  • 11 serve with sour cream and black olives.
