Strawberry Corn Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cups low-fat buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 cup strawberry, sliced

Recipe

  • 1 preheat oven to 350°f.
  • 2 line muffin cups with paper liners or spray with nonstick spray.
  • 3 combine cornmeal, flour, sugar, baking powder and salt in a bowl.
  • 4 in a separate mixing bowl, mix together eggs and buttermilk.
  • 5 add dry mixture to egg mixture.
  • 6 fold in butter and strawberries.
  • 7 divide batter among muffin cups.
  • 8 bake for 15-20 minutes or until browned.
  • 9 cool in pan for 10 minutes before transferring to a wire rack to finish cooling completely.
