Strawberry Corn Muffins

Ingredients

- 1 cup cornmeal
- 1 cup flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 1/4 cups low-fat buttermilk
- 2 tablespoons unsalted butter, melted
- 1 cup strawberry, sliced
Recipe
- 1 preheat oven to 350°f.
- 2 line muffin cups with paper liners or spray with nonstick spray.
- 3 combine cornmeal, flour, sugar, baking powder and salt in a bowl.
- 4 in a separate mixing bowl, mix together eggs and buttermilk.
- 5 add dry mixture to egg mixture.
- 6 fold in butter and strawberries.
- 7 divide batter among muffin cups.
- 8 bake for 15-20 minutes or until browned.
- 9 cool in pan for 10 minutes before transferring to a wire rack to finish cooling completely.
