My Favorite Taco Salad

Ingredients
- 1 lb 93% lean ground beef
- 1 medium onion, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 2 tomatoes, chopped
- 1 bunch lettuce, torn into pieces
- 1 (1 1/4 ounce) envelope taco seasoning (low-sodium)
- 8 ounces mexican blend cheese
- 1 avocado, chopped
- 1 (10 -12 ounce) bag tortilla chips, broken into pieces
- 8 ounces catalina dressing (i use kraft light)
Recipe
- 1 heat a large skillet over medium-high heat. add ground beef and onions and cook, breaking up any lumps of meat until no longer pink.
- 2 add taco seasoning mix and 1/4 cup water. stir and cook for 1 minute more.
- 3 mix in black beans and cook until beans are heated.
- 4 combine lettuce, tomatoes, avocado and cheese in a large salad bowl.
- 5 add meat mixture to salad bowl and toss ingredients well with salad dressing.
- 6 add in chips, toss and serve immediately.
- 7 serve with additional salad dressing if desired.
