My Favorite Taco Salad

Ingredients

  • 1 lb 93% lean ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tomatoes, chopped
  • 1 bunch lettuce, torn into pieces
  • 1 (1 1/4 ounce) envelope taco seasoning (low-sodium)
  • 8 ounces mexican blend cheese
  • 1 avocado, chopped
  • 1 (10 -12 ounce) bag tortilla chips, broken into pieces
  • 8 ounces catalina dressing (i use kraft light)

Recipe

  • 1 heat a large skillet over medium-high heat. add ground beef and onions and cook, breaking up any lumps of meat until no longer pink.
  • 2 add taco seasoning mix and 1/4 cup water. stir and cook for 1 minute more.
  • 3 mix in black beans and cook until beans are heated.
  • 4 combine lettuce, tomatoes, avocado and cheese in a large salad bowl.
  • 5 add meat mixture to salad bowl and toss ingredients well with salad dressing.
  • 6 add in chips, toss and serve immediately.
  • 7 serve with additional salad dressing if desired.
