Fiesta Soup

Total Time: 16 mins Preparation Time: 1 min Cook Time: 15 mins

Ingredients

  • 1 (32 ounce) box pacific natural foods organic roasted red pepper and tomato soup
  • 1 (14 ounce) can swanson chicken broth (33% less sodium version)
  • 2 (10 ounce) cans rotel diced tomatoes with lime juice and cilantro
  • 2 (12 ounce) cans green giant southwestern style corn
  • 1 (12 1/2 ounce) can kirkland canned chicken breasts
  • 2 tablespoons dried chopped onions

Recipe

  • 1 heat red pepper and tomato soup in pot.
  • 2 stir in chicken broth, rotel, onions, and corn.
  • 3 cook chicken in frying pan, minimal oil necessary.
  • 4 heat to boil, add chicken.
  • 5 serving suggestion: 5 broken tortilla chips and a sprinkle of mexican shredded cheese.
