Southwestern Chicken & Rice Taco Bell Version

Ingredients
- Servings: 6
- 4 boneless skinless chicken breast halves
- 1 cup taco bell thick & chunky salsa
- 1 (1 1/2 ounce) package taco bell taco seasoning mix
- 2 cups water
- 2 cups original minute rice, uncooked
- 1 cup black beans, drained (or 1 box zatarains black beans and rice instead of rice and beans separate)
- 1 cup shredded kraft four-cheese mexican blend cheese
- sour cream, for topping
Recipe
- 1 bring chicken, salsa, taco seasoning mix and water to a boil in large skillet; cover.
- 2 simmer 10 minutes.
- 3 return to boil.
- 4 stir in rice and beans.
- 5 sprinkle with cheese; cover.
- 6 cook on low heat 5 minutes.
- 7 top with sour cream.
- 8 serve hot.
- 9 the zatarains gives it a little kick. if you don't like it too spicy use a mild salsa.
