Southwestern Chicken & Rice Taco Bell Version

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 boneless skinless chicken breast halves
  • 1 cup taco bell thick & chunky salsa
  • 1 (1 1/2 ounce) package taco bell taco seasoning mix
  • 2 cups water
  • 2 cups original minute rice, uncooked
  • 1 cup black beans, drained (or 1 box zatarains black beans and rice instead of rice and beans separate)
  • 1 cup shredded kraft four-cheese mexican blend cheese
  • sour cream, for topping

Recipe

  • 1 bring chicken, salsa, taco seasoning mix and water to a boil in large skillet; cover.
  • 2 simmer 10 minutes.
  • 3 return to boil.
  • 4 stir in rice and beans.
  • 5 sprinkle with cheese; cover.
  • 6 cook on low heat 5 minutes.
  • 7 top with sour cream.
  • 8 serve hot.
  • 9 the zatarains gives it a little kick. if you don't like it too spicy use a mild salsa.
