Mom's Dried Beef And Corn Casserole

Ingredients

- 1 tablespoon butter
- 1/4 cup chopped onion
- 1 (5 ounce) package dried beef (cut up or sliced as desired)
- 1 cup sliced mushrooms
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup low-fat milk
- 2 egg yolks
- 1 teaspoon prepared mustard
- salt
- pepper
- 2 cups corn, drained
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon paprika
Recipe
- 1 saute 1 tablespoon butter and onion, add beef and mushrooms.
- 2 for the sauce: melt 2 tablespoons butter with a wooden spoon.
- 3 blend in flour, salt and pepper, and stir until bubbly and then remove from heat.
- 4 stir in milk.
- 5 put it back on the burner, and stir constantly.
- 6 bring to a boil, and boil for 1 minute- keep stirring so it doesn't burn.
- 7 in a small bowl, beat egg yolks and add the prepared mustard, and salt and pepper to taste.
- 8 combine the egg yolk mixture with the sauce mixture and dried beef mixture.
- 9 add the 2 cups corn.
- 10 pour into a 2 1/2 quart baking dish.
- 11 grate 1/2 cup cheese on top.
- 12 sprinkle paprika on top.
- 13 bake covered at 350 degrees for 30 minutes.
