Jessica's Best Fried Chicken

Ingredients
- oil, enough to cover about half of thickness of chicken slices when in skillet
- 3 -4 lbs boneless skinless chicken breasts, cut into slices
- 4 eggs
- 1 tablespoon milk
- 3 cups all-purpose flour
- 1/2 tablespoon season salt
Recipe
- 1 set up assembly line of bowls: (1) raw, sliced chicken; (2) milk and eggs, whisked; (3) flour and seasoned salt; (4) skillet with oil on medium/high heat.
- 2 make sure oil is hot before starting.
- 3 dip chicken in milk/egg mixture.
- 4 coat with flour/salt mixture.
- 5 carefully place chicken in skillet.
- 6 let cook for about 5 minutes, do not turn chicken until necessary.
- 7 the key is to only turn the chicken over once! cook about 3-5 minutes on each side, or until chicken is cooked through.
- 8 place on plate with paper towel to absorb oil.
