Ingredients
- Servings: 4
- 1 (11 ounce) can shoepeg corn
- 1 (15 ounce) can black-eyed peas
- 1 avocado, chopped
- 2 roma tomatoes, chopped (or hot house tomatoes)
- 2/3 cup chopped cilantro
- 2/3 cup chopped green onion
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 garlic cloves, pressed
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon cumin
Recipe
- 1 mix caviar ingredients in a bowl.
- 2 blend the dressing ingredients in blender.
- 3 pour dressing over caviar, chill at least one hour and serve with tortilla chips.
