Carrot Fritters

Ingredients

  • Servings: 4
  • 4 carrots, julienned
  • 1 onion, cut into 1/4-inch slices
  • 1 bunch green onions, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs
  • 2 quarts oil for deep frying

Recipe

    Preparation Time: 15 mins Cook Time: 15 mins Ready Time: 30 mins

  • in a medium bowl combine carrots, onion, green onions, flour, salt, pepper and eggs; mix well to coat.
  • heat oil in deep-fryer to 375 degrees f (190 degrees c).
  • using tongs, pick up veggies and drop into hot oil. fry 3 minutes on one side and 2 minutes on the other.
