Fantastic Taco Salad

Ingredients

- 1 lb 98% lean ground beef, cooked and drained of fat
- 1 onion, chopped and cooked with the ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 2 cups frozen corn kernels
- 1 (15 ounce) can refried beans (fat-free)
- 2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
- 1 cup salsa
- 2 green onions, chopped
- 1 (2 1/3 ounce) can sliced black olives (optional)
- 1 tomato, chopped
- 2 cups fritos corn chips, coarsely crushed (or doritos)
- 4 cups spring mixed salad greens
Recipe
- 1 brown the ground beef with the chopped onion and drain the fat.
- 2 add taco seasoning and cook according to package directions, adding proper amount of water. if you make your own taco seasoning (i use bulk taco seasoning mix), use 2 tbsp, and 1/3-1/2 cup water, and cook until the water is mostly evaporated.
- 3 add the corn kernels to the meat mixture and cook until thawed and heated through.
- 4 put salad greens into a deep bowl. add hot beef over the greens, top with 1 cup shredded cheese.
- 5 cook refried beans on stove until hot. add 1 cup cheese and 1 cup salsa. stir until combined.
- 6 pour beans over ground beef and cheese in dish.
- 7 sprinkle green onions, black olives (if you choose), tomatoes and crushed chips on top.
