Cuban Lobster Tails

Total Time: 12 mins Preparation Time: 5 mins Cook Time: 7 mins

Ingredients

  • Servings: 6
  • 1/4 cup fresh lemon juice
  • 3/4 cup fresh orange juice
  • 1 teaspoon orange zest, grated
  • 5 1/2 ounces chipotle chiles in adobo
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 6 medium lobster tails, in shell

Recipe

  • 1 preheat grill.
  • 2 in a blender combine the lemon juice, orange juice, orange zest, chipotle and adodo sauce, brown sugar and salt.
  • 3 puree until smooth.
  • 4 with motor running slowly add oil.
  • 5 puree for 2 minutes.
  • 6 pour into a bowl and set aside.
  • 7 take a sharp knife and cut lobster tails in half lengthwise.
  • 8 brush sauce on meat.
  • 9 place meat-side down on grill.
  • 10 cook for 3 minutes.
  • 11 turn tails meat side up.
  • 12 drizzle remaining sauce on meat.
  • 13 cook for 4 minutes, or until meat is opaque.
  • 14 serve.
