Rhubarb Pancake Dessert

Ingredients

• Servings: 20
• 1 cup sugar
• 1/3 cup pancake mix
• 1 teaspoon lemon juice
• 3 -4 cups rhubarb, cut up
• 3/4 cup pancake mix
• 2/3 cup sugar
• 1 egg, beaten
• 1/4 cup butter, melted

Recipe

• 1 mix bottom layer ingredients together and put in 9x13 pan that has been sprayed with non-stick cooking spray.
• 2 mix together first 3 ingredients of the top layer until crumbly and put on top of the rhubarb layer.
• 3 drizzle melted butter over the top.
• 4 bake at 350 degrees for 1 hour.
