Super Moist Brownies

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 16
  • 1/2 cup oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 medium potato, peeled, cooked and mashed
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup flour
  • 1/3 cup unsweetened cocoa
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup nuts, chopped (optional)
  • 1 cup powdered sugar
  • 2 teaspoons butter, melted
  • 1 ounce unsweetened chocolate, melted
  • 1/2 teaspoon vanilla
  • 1 tablespoon milk

Recipe

  • 1 combine oil, sugars, potato, vanilla and eggs.
  • 2 add dry ingredients and mix well.
  • 3 stir in nuts if desired.
  • 4 bake in a 9x9 inch pan at 350 degrees for 25-30 minutes.
  • 5 cool, cut into squares and drizzle with icing.
  • 6 for icing: melt the chocolate and butter. mix in the powdered sugar and vanilla.
  • 7 stir in enough milk to make of icing consistency.
