Picante Chicken And Peppers

Ingredients

- 4 boneless skinless chicken breast halves
- 1 teaspoon seasoning salt, to taste (i use seasonall)
- 2 tablespoons butter
- 1 onion
- 1 clove garlic, minced
- 1 green bell pepper
- 1 yellow bell pepper
- 1 red bell pepper
- 1 cup picante sauce (your favorite - home made or store bought like pace - the heat of this sauce determines the heat of)
Recipe
- 1 pound the chicken breast halves with a meat mallet until uniformly about 1/4" thick.
- 2 sprinkle them with a generous coating of seasoned salt on one side.
- 3 melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side.
- 4 slice onion into 1/4" thick slices and quarter the slices.
- 5 cut all peppers into strips about 1/4" wide.
- 6 add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes.
- 7 add the picante sauce over the top of the chicken and vegetables.
- 8 cover and simmer for about 5- 10 minutes, until vegetables are tender.
- 9 serve over hot cooked rice.
