Midwestern German Fries With Sausage Gravy

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 medium potatoes, baked
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 4 eggs, beaten
  • 1 lb bulk sausage, any flavor you prefer
  • 2 cups milk
  • 1/4 cup flour

Recipe

  • 1 slice the potatoes into thin slices. fry potatoes, onion and green pepper in butter in a large skillet.
  • 2 once the potatoes are fried to your liking, add the beaten eggs. stir mixture and cook until the eggs are done.
  • 3 while the potato mixture is cooking, brown the pound of sausage in another skillet breaking up the sausage into small chunks.
  • 4 once the sausage is completely cooked, mix the milk and flour together until smooth and add to the sausage. cook over medium-high heat until the sausage gravy thickens.
  • 5 serve the sausage gravy over the german fries.
