Easy Versatile Slow Cooker Chili

Ingredients
- Servings: 6
- 1 lb stewing beef
- 1 (8 ounce) jar salsa
- 1 (20 ounce) can red beans
- 1 (28 ounce) can diced tomatoes
- 1 (4 ounce) jar roasted red peppers
- 1 tablespoon chili powder
- 1 small onion, diced
- 1 cup shredded cheddar cheese
- 1 (6 ounce) package goldfish crackers
Recipe
- 1 at bedtime add one jar of your favorite salsa (mild, medium or hot) to the stew beef.
- 2 cook on low overnight.
- 3 in the morning stir the mixture.
- 4 add the beans, diced tomatoes, roasted red peppers and chili powder.
- 5 add water if you like a thinner chili.
- 6 cook on low all day.
- 7 to serve, top with onion, cheese and goldfish crackers.
- 8 i have used chicken breast instead of beef. it needs to be shredded in the morning.
