Chicken Enchilada Quiche

Total Time: 1 hr 15 mins Preparation Time: 10 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1 refrigerated pie crust, dough
  • 4 eggs
  • 1 cup half-and-half
  • 1 (12 1/2 ounce) can light chicken breasts
  • 1 1/2 cups tortilla chips
  • 2 cups shredded monterey jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 (4 ounce) can green chilies
  • 1/2 teaspoon nu salt salt substitute

Recipe

  • 1 heat oven to 350 degrees.
  • 2 place the pie crust in a glass pie pan.
  • 3 in a medium bowl, whisk eggs until well blended then beat in half and half.
  • 4 stir in chicken, chips, cheeses, salsa, green chiliesand salt.
  • 5 pour into pie crust filled plate.
  • 6 bake 65 minutes or until crust is a light golden brown and a knife inserted into pie comes out clean.
  • 7 let stand 10 minutes before cutting.
  • 8 garnish with sour cream, and /or guacamole.
