Chicken Enchilada Quiche

Ingredients
- 1 refrigerated pie crust, dough
- 4 eggs
- 1 cup half-and-half
- 1 (12 1/2 ounce) can light chicken breasts
- 1 1/2 cups tortilla chips
- 2 cups shredded monterey jack cheese
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1 (4 ounce) can green chilies
- 1/2 teaspoon nu salt salt substitute
Recipe
- 1 heat oven to 350 degrees.
- 2 place the pie crust in a glass pie pan.
- 3 in a medium bowl, whisk eggs until well blended then beat in half and half.
- 4 stir in chicken, chips, cheeses, salsa, green chiliesand salt.
- 5 pour into pie crust filled plate.
- 6 bake 65 minutes or until crust is a light golden brown and a knife inserted into pie comes out clean.
- 7 let stand 10 minutes before cutting.
- 8 garnish with sour cream, and /or guacamole.
