Raspberry Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg, beaten
  • 3 tablespoons butter, melted
  • 3/4 cup milk
  • 1 cup raspberries, fresh or frozen
  • 1/2 tablespoon almond extract
  • 1/2 tablespoon vanilla extract
  • 2 tablespoons powdered sugar (optional)

Recipe

  • 1 preheat oven to 375 degrees f.
  • 2 in a large bowl, combine the flour, sugar, baking powder and salt.
  • 3 in another bowl mix the egg, butter and milk together and fold into the dry ingredients.
  • 4 gently fold the raspberries into the other ingredients. (batter will be quite stiff).
  • 5 line muffin tins with paper cups and fill full with the batter.
  • 6 bake for 25 minutes or until done.
  • 7 once out of the oven, cool for 5 minutes or so and dust with the powdered sugar, if desired.
