Pat's American Home Fries

Ingredients
- Servings: 3
- 4 medium potatoes, baked (leftover, cold)
- 1/4 small onion, chopped
- 1/2 teaspoon seasoning salt
- 1/4 teaspoon pepper (canned)
- 2 tablespoons salted butter
- 4 tablespoons corn oil
Recipe
- 1 leave the peelings on the potatoes and dice into 1/2-inch cubes.
- 2 melt the butter and add the oil in a large no-stick skillet over medium-high heat. when the butter/oil is hot, add in the diced potatoes and chopped onion.
- 3 fry until at least 1/2 of the sides have browned -- stirring and turning should be kept to an absolute minimum.
- 4 transfer the home fries to a serving plate with a couple of paper towels on it to absorb extra oil.
