Green Beans With Warm Bacon Dressing

Ingredients

- 2 lbs fresh green beans, trimmed
- 4 slices bacon
- 3 large shallots, thinly sliced
- 2 tablespoons cider vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 in large pot, bring green beans and enought water to cover to a boil.
- 2 cook 6 minutes or until tender crisp.
- 3 cook bacon in large skillet over medium heat until crisp.
- 4 drain on paper towel,.
- 5 remove all but 2 tbs bacon fat from skillet.
- 6 add shallots and saute` 1-2 minutes untils slightly golden.
- 7 remove from heat and stir in vinegar.
- 8 add green beans and salt and pepper.
- 9 toss to coat.
- 10 crumble bacon on top.
- 11 serve immediately.
