Confetti Bean Salad

Total Time: 8 hrs 20 mins Preparation Time: 20 mins Cook Time: 8 hrs

Ingredients

  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (10 ounce) package frozen corn, thawed
  • 1/2 cup red pepper, chopped
  • 1/2 cup green pepper, chopped
  • 1/2 cup fresh parsley, minced
  • 1/4 cup onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup balsamic vinegar (or red wine vinegar)
  • 1/4 cup olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon sugar

Recipe

  • 1 combine veggies, beans and garlic in a large bowl.
  • 2 combine remaining ingredients in a jar with a tight fitting lid and shake well.
  • 3 pour jar contents over bean mixture.
  • 4 toss to coat.
  • 5 cover and refrigerate over night.
