Rhubarb Sauce With Zest

Ingredients

- 4 cups chopped frozen rhubarb, thawed
- 1 cup sugar
- 2 tablespoons cornstarch
- 2 -3 teaspoons grated orange zest
- 1/8 cup water, if using fresh rhubarb
Recipe
- 1 combine rhubarb, sugar, cornstarch and zest in a saucepan.
- 2 cook over medium heat, stirring constantly, for 5 minutes or until mixture has thickened.
- 3 serve hot or cold.
- 4 if using fresh rhubarb:.
- 5 add 1/8 cup water to rhubarb in saucepan, cover with lid and cook.
- 6 when it has cooked down, mix cornstarch with 2 t of water and whisk into rhubarb.
- 7 add sugar and zest.
- 8 cook over medium heat, stirring constantly, for 5 minutes or until mixture has thickened.
