Rhubarb Nut Muffins

Ingredients
- 1 1/2 cups flour
- 3/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 1 egg
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 1 cup diced rhubarb (fresh)
- 1/2 cup chopped walnuts
- 1/4 cup packed brown sugar
- 1/4 cup chopped walnuts
- 1/2 teaspoon cinnamon
Recipe
- 1 combine all ingredients except the topping and mix well.
- 2 fill greased muffin cups 3/4 full.
- 3 then sprinkle topping over the top and bake at 375 degrees for 20 to 25 minute.
