Southwestern Black-eyed Peas

Ingredients

  • Servings: 6
  • 2 cups water
  • 3/4 cup dried black-eyed peas (6 oz)
  • 1 tablespoon vegetable oil
  • 1 cup okra, sliced
  • 1 small onion, chopped (1/4 cup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper sauce
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh cilantro, chopped
  • 1 small tomato, seeded and chopped

Recipe

  • 1 heat water and peas to boiling in 2 quart saucepan.
  • 2 boil uncovered 2 minutes; reduce heat to low.
  • 3 cover and simmer 30-40 minutes, stirring occasionally, until beans are tender.
  • 4 drain peas.
  • 5 heat oil in same saucepan over medium heat.
  • 6 cook okra, onion, salt, pepper sauce and garlic in oil about 5 minutes, stirring occasionally, until onion is tender.
  • 7 stir in cilantro, tomato and beans.
  • 8 cook, stirring occasionally, until hot.
