Mary's Chicken Wild Rice Soup

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 12 tablespoons butter or 12 tablespoons margarine
  • 1 small onion
  • 1 cup flour
  • 6 cups chicken broth
  • 1 (10 1/2 ounce) can campbell's condensed chicken broth
  • 1 cup raw wild rice
  • 3 -4 cups water
  • 1 teaspoon season salt
  • 2 cups half-and-half
  • 1 rotisserie-cooked chicken

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray 3 quart casserole dish with cooking spray.
  • 3 add wild rice and water.
  • 4 bake for 1 hour until rice pops open.
  • 5 drain any remaining water from rice and set aside.
  • 6 pick all chicken meat from chicken and chop. set aside.
  • 7 in large stock pot add onions and butter.
  • 8 cook until onions are tender.
  • 9 blend in flour.
  • 10 gradually stir in chicken broth.
  • 11 add 1 can campbells condensed chicken broth (no water).
  • 12 cook stirring consistently until mixture comes to a boil.
  • 13 let boil 1 minute.
  • 14 stir in rice, chicken and half and half.
  • 15 heat to serving temperature.
