Marinated Potato Salad

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 20
  • 10 lbs potatoes
  • 1 cup water
  • 1 cup wine vinegar
  • 1/2 cup sugar
  • 1 bunch green onion, sliced
  • 3 hard-boiled eggs, diced
  • salt and pepper
  • 1 tablespoon celery seed
  • 2 cups mayonnaise

Recipe

  • 1 bring a large pot of salted water to a boil.
  • 2 add potatoes and cook until tender but still firm, about 15 minutes.
  • 3 drain and allow to cool.
  • 4 slice cooled potatoes and layer in a large bowl or dish.
  • 5 in a saucepan combine water, vinegar and sugar.
  • 6 bring to a boil and cook for one minute.
  • 7 remove from heat and pour over potatoes.
  • 8 cover and chill for at least 12 hours.
  • 9 drain excess marinade and add onions, eggs, salt, pepper, celery seed and mayonnaise.
  • 10 mix well and serve chilled.
