Marinated Potato Salad

Ingredients

- 10 lbs potatoes
- 1 cup water
- 1 cup wine vinegar
- 1/2 cup sugar
- 1 bunch green onion, sliced
- 3 hard-boiled eggs, diced
- salt and pepper
- 1 tablespoon celery seed
- 2 cups mayonnaise
Recipe
- 1 bring a large pot of salted water to a boil.
- 2 add potatoes and cook until tender but still firm, about 15 minutes.
- 3 drain and allow to cool.
- 4 slice cooled potatoes and layer in a large bowl or dish.
- 5 in a saucepan combine water, vinegar and sugar.
- 6 bring to a boil and cook for one minute.
- 7 remove from heat and pour over potatoes.
- 8 cover and chill for at least 12 hours.
- 9 drain excess marinade and add onions, eggs, salt, pepper, celery seed and mayonnaise.
- 10 mix well and serve chilled.
