Pizza Frittata

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 8 eggs (or egg substitute to equal 8 eggs, like egg beaters)
  • 1/4 cup shredded parmesan cheese
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 cup sliced fresh mushrooms (3 oz)
  • 1 cup chopped bell pepper (1 medium)
  • 1/4 cup chopped onion (1 small)
  • 1/4 cup sliced ripe olives

Recipe

  • 1 beat eggs, cheese, italian seasoning, salt and pepper until well blended; set aside.
  • 2 in ovenproof 12" nonstick skillet, melt butter over medium heat.
  • 3 cook mushrooms, bell pepper, onion and olives in butter about 2 minutes, stirring occasionally, until vegetables are crisp-tender.
  • 4 spread mixture evenly in bottom of skillet.
  • 5 pour egg mixture evenly over vegetable mixture; reduce heat to medium-low.
  • 6 cover; cook 9-11 minutes or until eggs are set in center and light brown on bottom.
  • 7 remove cover.
  • 8 broil frittata about 5" from heat for about 2 minutes or until golden brown.
  • 9 cut into wedges.
