Peppered Lamb Tenderloin Sandwiches

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 lb lamb tenderloin
  • 2 teaspoons olive oil
  • 2 teaspoons lemon pepper
  • 1 teaspoon salt
  • 8 dinner rolls, split
  • 2 tablespoons whole grain mustard
  • 2 tablespoons mayonnaise

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 brush lamb tenderloin with olive oil.
  • 3 rub combined lemon pepper and salt over entire surface of lamb tenderloin.
  • 4 place on rack in roasting pan.
  • 5 bake 25 minutes or until meat thermometer registers 160 degrees.
  • 6 let meat rest 5 minutes.
  • 7 carve into thin slices, i use my slicer or an electric knife to get it very thin.
  • 8 spread rolls with mustard and mayo.
  • 9 fill with meat.
