Peppered Lamb Tenderloin Sandwiches

Ingredients
- 1 lb lamb tenderloin
- 2 teaspoons olive oil
- 2 teaspoons lemon pepper
- 1 teaspoon salt
- 8 dinner rolls, split
- 2 tablespoons whole grain mustard
- 2 tablespoons mayonnaise
Recipe
- 1 preheat oven to 425 degrees.
- 2 brush lamb tenderloin with olive oil.
- 3 rub combined lemon pepper and salt over entire surface of lamb tenderloin.
- 4 place on rack in roasting pan.
- 5 bake 25 minutes or until meat thermometer registers 160 degrees.
- 6 let meat rest 5 minutes.
- 7 carve into thin slices, i use my slicer or an electric knife to get it very thin.
- 8 spread rolls with mustard and mayo.
- 9 fill with meat.
