Kat's Potato Salad

Ingredients
- Servings: 8
- 5 -6 large idaho potatoes
- 1/3 cup miracle whip
- 3 tablespoons yellow mustard
- 3 stalks celery
- 1 large onion (i use , but red tastes good too)
- 1 (3 ounce) jar pimientos (chopped)
- 2 tablespoons dill relish or 2 tablespoons sweet relish
- 2 hard-boiled eggs
Recipe
- 1 cut potatos in small chunks (peeled or unpeeled).
- 2 combine potatoes in large mixing bowl with chopped celery, chopped onion, pimento, relish and eggs.
- 3 add miracle whip and yellow mustard.
- 4 salt and pepper to taste.
- 5 cover and chill for at least 2 hours (overnight is better).
- 6 serve.
