Kat's Potato Salad

Ingredients

  • Servings: 8
  • 5 -6 large idaho potatoes
  • 1/3 cup miracle whip
  • 3 tablespoons yellow mustard
  • 3 stalks celery
  • 1 large onion (i use , but red tastes good too)
  • 1 (3 ounce) jar pimientos (chopped)
  • 2 tablespoons dill relish or 2 tablespoons sweet relish
  • 2 hard-boiled eggs

Recipe

  • 1 cut potatos in small chunks (peeled or unpeeled).
  • 2 combine potatoes in large mixing bowl with chopped celery, chopped onion, pimento, relish and eggs.
  • 3 add miracle whip and yellow mustard.
  • 4 salt and pepper to taste.
  • 5 cover and chill for at least 2 hours (overnight is better).
  • 6 serve.
